This is what I love about muffins: they’re a bit of a sweet treat but you can stuff them full of all sorts of healthy ingredients.
And when you bake muffins from scratch, you get to decide how healthy you want them to be. You can include whole grain flour, dried fruit, ground flax or wheat germ. You can use butter or a healthier oil, and toss in some nuts or seeds. You can add pureed or grated fruit or vegetables. (And I often throw in a handful of chocolate chips too, as an extra treat for my kids.)

Baking tip – How to make light-textured muffins:
Everyone has their favourite way to mix up a batch of muffins. The following are a few things I have learned over the years to keep my muffins light textured.
- Mix the batter gently and always by hand, using a rubber spatula or wooden spoon to fold the wet ingredients into the dry ingredients.
- When you add the wet ingredients to dry, mix just until barely combined. A few streaks of flour or some lumps in the batter are fine.
- Bake your muffins as soon as the batter is combined so the leavening agent can do its work in the oven.
